What is pimbina?

Pimbina is a large shrub that grows wild in Quebec, producing small, tart red berries. This native shrub offers clusters of scarlet berries that often persist until the first snows, defying winter with their brilliance.

How to use pimbina?

We love it as a hot infusion for a vitamin boost, or in its iced version for thirst-quenching hydration. In cooking, once rehydrated, the berries transform into sublime jellies or wonderfully accompany wild meats. For the more daring, they add a spectacular boreal touch to cocktails and mocktails.
